Evaporation (of sweat) is a chemical process by which water becomes vapour, OK, that part is obvious. The cooling happens because it is a endothermic reaction, meaning that heat is used up during it: Heat+water=water vapour. Heat from you're body is used as the 'energy' needed for the evaporation process to occur. Your body heat is basically the fuel that runs this whole shebang.
